They are black because the baking sheets and muffin pans in the original set were black. Infusorian is converting content from TS2 so much of his work is based on what the content was originally.
I really like the peaches (are they supposed to be peaches, or the Chinese buns that *look* like peaches?). I'd nab those baking sheets, too, but I'm not fond of the color, so maybe they will eventually be recolored.
